Blueberry cake
Ingredients

- All purpose flour - 170 gm
- Baking powder-1/2 tsp
- Eggs - 4 (at room temperature)
- Vanilla essence -1 tsp
- Honey - 1 tsp
- Sugar- 70 gm
- Oil - 70 ml
- Salt- 1/2 tsp
- Blueberry Preserve - 11/2 cup
- Sugar syrup - 1/2 cup

Method

- Preheat an oven at 350F (180C).
- Sieve together flour, salt, baking powder. (dry ingredients)
- Separate egg whites and yolks
- In a clean bowl add egg whites and sugar and beat till hard peaks.
- In another bowl beat egg yolks , oil, honey and vanilla essence well
- Add sieved dry ingredients to the beaten egg yolk oil mixture and gently fold in.
- Add 4 tbsp of blueberry preserve to the mixture.
- Also fold in the beaten egg white sugar mixture gently till it is well incorporated
- Pour the two batter on a lightly greased dusted baking pan.
- Bake for 30-40 mins until a toothpick inserted at the center comes out clean.
- Allow to cool completely.
- Meanwhile make frosting by beating whipping cream, sugar and vanilla essence and keep refrigerated.
- Cut the cake into 3 layers.
- In each layer brush sugar syrup at first followed by whipping cream frosting and 2 tbsp of blueberry preserve.
- After all the layers are completed, place the cake in refrigerator.
- slice and enjoy.
