Blueberry cake




Ingredients

  • All purpose flour - 170 gm
  • Baking powder-1/2 tsp
  • Eggs  - 4  (at room temperature)
  • Vanilla essence -1 tsp
  • Honey - 1 tsp
  • Sugar- 70 gm 
  • Oil - 70 ml
  • Salt- 1/2 tsp
  • Blueberry Preserve - 11/2 cup
  • Sugar syrup - 1/2 cup
For frosting

  • Whipping cream - 2 cup
  • Sugar - 3 tbsp
  • Vanilla essence - 1/2 tsp


Method

  1. Preheat an oven at 350F (180C). 
  2. Sieve together flour, salt, baking powder. (dry ingredients)
  3. Separate egg whites and yolks
  4. In a clean bowl add egg whites and sugar and beat till hard peaks.
  5. In another bowl beat egg yolks , oil, honey and vanilla essence well
  6. Add sieved dry ingredients to the beaten egg yolk oil mixture and gently fold in.
  7. Add 4 tbsp of blueberry preserve to the mixture.
  8. Also fold in the beaten egg white sugar mixture gently till it is well incorporated
  9. Pour the  two batter on a lightly greased dusted baking pan.
  10. Bake for 30-40 mins until a toothpick inserted at the center comes out clean.
  11. Allow to cool completely.
  12. Meanwhile make frosting by beating whipping cream, sugar and vanilla essence and keep refrigerated.
  13. Cut the cake into 3 layers.
  14. In each layer brush sugar syrup at first followed by whipping cream frosting and 2 tbsp of blueberry preserve.
  15. After all the layers are completed, place the cake in refrigerator.
  16. slice and enjoy.
