Mambazha Pradhaman (Mango Payasam)




Ingredients

  • Mango Pulp - 2 cup (3 mangoes)
  • Mango -1 (cut into small cubes)
  • Thin Coconut milk - 21/2 cup
  • Thick coconut milk - 11/2 cup
  • Condensed Milk- 2 tbsp
  • Milk -1 cup
  • Ghee -3 tbsp
  • Cashew nuts - few
  • Raisins -  few
  • Coconut flakes - 3 tbsp
  • Jaggery - 450 gm
  • Water - 1/2 cup
  • Cardamom powder - 1 tsp
  • Dried Ginger Powder (Chukku podi ) - 1 tsp



Method

  1. Melt jaggery with water to form thick jaggery syrup.Drain and keep aside.
  2. In a wide bottomed pan add  11/2 tbsp ghee.Fry coconut flakes followed by cashew and raisins.
  3. Drain and keep aside.
  4. In the same pan add mango pulp and jaggery syrup and saute till it gets almost dry (varttiyedukuka).When it is almost dry add chopped mango pieces.
  5. Mix condensed milk ,cardamom and dry ginger powder in 1 cup milk and add to the mango jaggery mixture and mix well.
  6. Add thin coconut milk and mix well.
  7. Reduce flame to low and add thick coconut milk and stir continuously.
  8. Switch off the flame and keep aside.
  9. Add one more pinch of cardamom and dried ginger powder , fried  coconut flakes, nuts and raisins.and mix well.
  10. Serve hot or chilled.

  • This payasam tastes best the next day when chilled.
