Mutton Stew






Ingredients

  • Mutton - 1/2 kg
  • Onion -1 small ( thinly sliced)
  • Green Chilly - 5 (slit into 2)
  • Curry Leaves - few
  • Ginger - 1 inch piece(chopped)
  • Garlic - 5  big pods (chopped)
  • Potato Cubed - 1/2 cup
  • Carrot Cubed - 1/4 cup
  • Cloves - 2
  • Cardamom -3
  • Cinnamon -1  small piece
  • Thin coconut milk - 11/2 cup
  • Thick coconut milk  - 3/4 cup
  • Water - 1/4 cup
  • Lemon juice/Vinegar -1 tsp
  • Oil - 2 tbsp
  • Salt - to taste

To Marinate

  • Pepper Powder - 1 tbsp
  • Coriander Powder - 2 tbsp
  • Garam Masala Powder - 1tsp
  • Green Chilly - 5 (slit into 2)
  • Curry Leaves - few
  • Salt - 2 tbsp

Method
-------------
  1. Marinate mutton with ingredients in "To Marinate" section and keep for a minimum of 1 hr.
  2. In a pressure cooker add oil.
  3. Add whole spices and saute for a while.
  4. Add sliced onion, green chilly,ginger garlic, curry leaves  saute till onion becomes translucent.
  5. Add marinated mutton pieces and saute for  a while.
  6. Add 1/4 cup water and cook  until done .( 6-8 whistles on med  heat.)
  7. Once pressure is released open the lid and add cubed potato, carrot and cook for 1 more whistle.
  8. Open lid and add thin coconut milk and bring to boil.
  9. Now reduce heat to low add thick coconut milk.
  10. Remove from fire and add 1 tsp lemon juice/vinegar and crushed pepper .
  11. Add 1 tsp oil and curry leaves at top.
  12. Tastes  best with bread,chapati and palappam,.
