Cheera Mutta Thoran (Spinach Egg Stir Fry)




Ingredients

  • Spinach chopped (green) - 11/2 cup
  • Eggs - 3
  • Onion Chopped - 2 tbsp
  • Green Chilli -1 (chopped)
  • Curry Leaves - few
  • Mustard seeds - 1/2 tsp
  • Red Chilli flakes  - 1 tsp
  • Turmeric Powder - 1/4 tsp
  • Oil- 1 tbsp
  • Salt - To taste

To Grind (Coarse)

  • Coconut - 1/4 cup
  • Pearl Onion  - 1 nos
  • Jeera (Cumin) -1 pinch
  • Turmeric Powder - 1/4 tsp
  • Salt - 1 pinch
  • Pepper Powder - 1/4 tsp

Method
------------
  1. Beat 3 eggs with salt and turmeric powder and keep aside.
  2. In a pan add oil. Splutter mustard seeds, curry leaves. Add chopped spinach and salt saute for 2 mins until spinach is cooked and all water is dried up.Keep it aside.
  3. In the same pan add 1 tbsp oil.Saute chopped onions, green chilli, chilli flakes  until onion gets light brown.
  4. Pour the beaten eggs and scramble.
  5. When it is cooked add the cooked spinach and mix well.
  6. Add grounded coconut mixture and saute for 2 mins.
  7. Add 1 tsp coconut oil and sprinkle some curry leaves.
  8. Serve hot with rice.
