Cheera Mutta Thoran (Spinach Egg Stir Fry)
Ingredients

- Spinach chopped (green) - 11/2 cup
- Eggs - 3
- Onion Chopped - 2 tbsp
- Green Chilli -1 (chopped)
- Curry Leaves - few
- Mustard seeds - 1/2 tsp
- Red Chilli flakes - 1 tsp
- Turmeric Powder - 1/4 tsp
- Oil- 1 tbsp
- Salt - To taste
To Grind (Coarse)

- Coconut - 1/4 cup
- Pearl Onion - 1 nos
- Jeera (Cumin) -1 pinch
- Turmeric Powder - 1/4 tsp
- Salt - 1 pinch
- Pepper Powder - 1/4 tsp
Method
------------
- Beat 3 eggs with salt and turmeric powder and keep aside.
- In a pan add oil. Splutter mustard seeds, curry leaves. Add chopped spinach and salt saute for 2 mins until spinach is cooked and all water is dried up.Keep it aside.
- In the same pan add 1 tbsp oil.Saute chopped onions, green chilli, chilli flakes until onion gets light brown.
- Pour the beaten eggs and scramble.
- When it is cooked add the cooked spinach and mix well.
- Add grounded coconut mixture and saute for 2 mins.
- Add 1 tsp coconut oil and sprinkle some curry leaves.
- Serve hot with rice.
