Wheat Pancake with jaggery


Ingredients

  • Wheat flour - 1 cup
  • Small Banana - 1
  • Grated Coconut - 2 tbsp
  • Jaggery syrup - 1/4 cup
  • Cardamom powder - 1 pinch
  • Ghee/ oil - as needed
  • Salt - 1/2 tsp
  • Water 



Method

  1. Slice the banana to small round pieces and mash them well using a blender.
  2. In  a vessel mix wheat flour , jaggery syrup, coconut, mashed banana , salt and cardamom  powder well.
  3. Add water little by little so as to make a smooth batter which is neither too thick nor runny in consistency and keep aside for 10 mins (If you want you can just give a pulse in the mixer).
  4. Heat a tawa .Add a ladle full of batter and spread to form a circle.
  5. Apply little ghee on top.When one side turns brown flip the other side and cook for another minute .
  6. When done transfer to a plate and  serve.


Notes
-----------
  1. you can increase the quantity of jaggery syrup to your taste.
  2. Oil can be used for smearing instead of ghee.But ghee gives more flavor to the pancake.
  3. Do not spread the pancake too thin as it will be difficult to flip it.
