Indian Style Veggie Pasta
Ingredients

- Pasta - 1 1/2 cup
- Carrot - 1/4 cup (Small cubes)
- Beans - 1/4 cup(chopped)
- Cooked Peas - 1/4 cup
- Onion - 1/4 cup (chopped)
- Tomatoes - 1/2 cup (chopped)
- Capsicum - 2 tbsp
- Coriander Leaves - 1/4 cup chopped
- Curry Leaves - few
- Green Chilli - 1 chopped
- Turmeric Powder - 1/4 tsp
- Red Chilli Powder - 1/2 tsp
- Coriander Powder - 1/2 tsp
- Lemon Juice - 1/2 tsp
- Mustard Seeds - 1 tbsp
- Ginger Garlic Paste - 1/2 tsp
- Jeera/Cumin - 1 pinch
- Salt
- Butter - 1tsp
- Water
- Olive Oil - 2 tbsp
Method

- Boil Pasta with enough water and salt till done. Drain and keep aside.
- In a wok add olive oil. Splutter mustard seeds and cumin seeds followed by curry leaves.
- Add chopped onions and saute till wilted.
- Add ginger garlic paste and saute again.
- Add carrots, beans ,capsicum and peas and saute again.(any veggies of your choice)
- Add tomatoes and saute till they become mushy.
- Add chilly, coriander, turmeric powder and saute again.
- Add 1/4 cup water if needed and make a thick gravy.
- Add cooked pasta and mix gently and switch off the flame.
- Lastly add freshly chopped coriander leaves, lemon juice and butter and mix gently.
- Serve hot.
