Vazha Koombu Vanpayar Thoran (Banana Flower Red Bean Stir Fry )
Ingredients

- Vazha koombu /Banana Flower - 1 medium
- Green chilli - 2
- Curry Leaves- few
- Mustard seeds - 1/2 tsp
- Red Chilli - 1
- Salt - To taste
- Turmeric Powder - 1/2 tsp
- Red Chilli Powder - 1 tsp
- Cooked Red bean (Vanpayar) -1/2 cup
- Oil - 2 tbsp
- Water - 3 tbsp
To Grind (Coarse)

- Coconut - 1/2 cup
- Pearl Onion - 2 nos
- Jeera (Cumin) - 1 pinch
- turmeric Powder - 1/4 tsp
- Salt - 1 pinch
Method
------------
- Wash and clean the banana flower and remove the outer 3 or 4 layers.
- Chop it into very fine pieces.
- Add 1 tbsp oil, salt, turmeric powder green chilli and mix well. (this prevents the flower from getting dark)
- In a pan add 1 tsp oil. Splutter mustard seeds followed by red chilli and curry leaves.
- Add chopped banana flower and red chilli powder and mix well.
- Sprinkle little water and cover the lid and cook stirring in between.
- Once cooked, add cooked red bean (vanpayar ) and mix well.
- Add grounded coconut mixture and saute in low flame for 5 mins.
- Lastly add 1tsp coconut oil and fresh curry leaves and mix gently.
- Serve hot with rice
