Vazha Koombu Vanpayar Thoran (Banana Flower Red Bean Stir Fry )




Ingredients

  • Vazha koombu /Banana Flower - 1  medium
  • Green chilli - 2
  • Curry Leaves- few
  • Mustard seeds - 1/2 tsp
  • Red Chilli  - 1
  • Salt - To taste
  • Turmeric Powder - 1/2 tsp
  • Red Chilli Powder - 1 tsp
  • Cooked Red bean (Vanpayar) -1/2 cup
  • Oil - 2 tbsp
  • Water - 3 tbsp

To Grind (Coarse)

  • Coconut - 1/2 cup
  • Pearl Onion - 2 nos
  • Jeera (Cumin) - 1 pinch
  • turmeric Powder - 1/4 tsp
  • Salt - 1 pinch



Method
------------
  1. Wash and clean the banana flower and remove the outer 3 or 4 layers.
  2. Chop it into  very fine pieces.
  3. Add 1 tbsp oil, salt, turmeric powder green chilli and mix well. (this prevents the flower from getting dark)
  4. In a pan add 1 tsp oil. Splutter mustard seeds followed by red chilli and curry leaves.
  5. Add chopped banana flower and red chilli powder and mix well.
  6. Sprinkle little water and cover the lid and cook stirring in between.
  7. Once cooked, add cooked red bean (vanpayar ) and mix well.
  8. Add grounded coconut mixture and saute in low flame for 5 mins.
  9. Lastly add  1tsp coconut oil and fresh curry leaves and mix gently.
  10. Serve hot with rice
