Pazham Nirachathu (Stuffed Banana Fry)
Ingredients

- Ripe Banana(Ethapazham) - 3
- Grated Coconut - 2/3 cup
- Sugar - 2 tbsp
- Cashew Nuts - 2 tbsp (chopped )
- Raisins - 2 tbsp
- Cardamom Powder - 1/4 tsp
- Ghee - 1 tbsp
- Oil - For Frying
For Coating

- All Purpose Flour / Maida - 4 tbsp
- Salt - 1 pinch
- Sugar - 1 tsp
- Water - as needed to make a paste
Method
------------
- In a pan add ghee and fry nuts and raisins.
- Add coconut and saute for 2 mins.
- Add sugar and cardamom powder and mix till sugar is completely dissolved. This is the "filling" for the banana.
- Make a paste by mixing maida, salt, sugar and little water. The paste should be thick enough to coat the banana
- Peel the banana and make incision lengthwise without cutting the edges.
- Remove the black flower from the banana carefully.
- Fill the banana with coconut filling. Take care not to overstuff.
- Seal the edges with the maida paste.
- In a heated pan add oil. (You can also use oil and ghee)
- Fry the banana till both sides reaches golden brown colour.
- Take out from oil. Drain and slice to small pieces and serve.
Notes
-------
- The banana should not be over ripe , else it will be difficult to stuff.
- If you have difficulty to make cut and do the filling, make incision with the peel of banana on and stuff with coconut mixture and then remove the peel as it will be easy to hold and have a better grip.
- You can increase or decrease the quantity of sugar to your taste.
