Egg Potato Curry

- Egg- 4
- Onion -1 big (thinly sliced lengthwise)
- Green chilli -3 (slit into 2)
- Potato - 1 small (cut into small cubes)
- Curry Leaves - 1 spring
- Ginger - 1 small piece
- Turmeric Powder -1/2 tsp
- Coriander Powder - 1 tbsp
- Garam masala Powder - 1/4 tsp
- Thick coconut milk - 1/2 cup
- Mustard seeds- 1 sp
- Water - 1 cup
- Oil
- Salt - to taste
Method

- In a heated pan add oil. splutter mustard seeds and a pinch of turmeric powder
- Add chopped ginger and saute till a nice aroma appears.
- Add sliced onion, green chilli, potato cubes and curry leaves saute till onion becomes translucent and potatoes are half cooked.
- Add salt, coriander , turmeric powders and garam masala powder and mix well.
- Add 1 cup water . Cover and cook till potato is fully cooked thick.
- Now reduce flame to low and add thick coconut milkand switch of
- Add hard boiled eggs.
- Add 1 tsp oil and curry leaves at top.
- Goes well with pothappam, appam, bread ,chapati,puttu, idiyappam and palappam.
