Egg Potato Curry



Ingredients

  • Egg- 4
  • Onion -1  big (thinly sliced lengthwise)
  • Green chilli -3 (slit into 2)
  • Potato - 1 small (cut into small cubes)
  • Curry Leaves - 1 spring
  • Ginger - 1 small piece
  • Turmeric Powder -1/2 tsp
  • Coriander Powder - 1 tbsp
  • Garam masala Powder - 1/4 tsp
  • Thick coconut milk  - 1/2 cup
  • Mustard seeds- 1 sp
  • Water - 1 cup
  • Oil
  • Salt - to taste





Method

  1. In a heated pan add oil. splutter mustard seeds and  a  pinch of turmeric powder
  2. Add chopped ginger and saute till a nice aroma appears.
  3. Add sliced onion, green chilli, potato cubes  and curry leaves  saute till onion becomes translucent and potatoes are half cooked.
  4. Add salt, coriander , turmeric powders and garam masala powder and mix well.
  5. Add 1 cup water . Cover and cook till potato is fully cooked thick.
  6. Now reduce flame  to low  and add thick coconut milkand switch of
  7. Add hard boiled eggs.
  8. Add 1 tsp oil and curry leaves at top. 
  9. Goes well with  pothappam, appam, bread ,chapati,puttu, idiyappam and palappam.
