Sukhiyan
Ingredients
For Filling- Green gram - 1 cup
- Jaggery syrup - 1/2 cup
- Grated Coconut - 1 cup
- Ghee 1 tsp
- Cardamom powder - 1/2 tsp
- Salt - 1 pinch
- Water- as needed
For outer batter
- All purpose flour - 1 cup
- Salt - 1/2 tsp
- Sugar - 1 tbsp
- Turmeric powder- 1/2 tsp
- Cardamom powder 1 pinch
- Water - as needed
Oil- - for deep frying
Method
- Prepare a thick batter by mixing all purpose flour, turmeric powder salt, sugar, cardamom powder ,rice flour adding adequate amount of water. The batter should not be too thin or thick.Keep aside.
- Soak Green gram in water for about 5 hrs.
- Pressure cook it adding a pinch of salt and adequate water(2 whistles) .It should not be overcooked.
- Open the cooker and add jaggery syrup and mix till all water is evaporated.
- Add cardamom powder, grated coconut and ghee and mix well.
- Allow to cool.
- Make lemon sized balls of this mixture.
- Dip it in the flour batter and fry on hot oil till outer sides are crispy and golden.
- Serve with hot tea.
