Sukhiyan






Ingredients

For Filling
  • Green gram - 1 cup
  • Jaggery  syrup - 1/2 cup
  • Grated Coconut - 1 cup
  • Ghee 1 tsp
  • Cardamom powder - 1/2 tsp
  • Salt - 1 pinch
  • Water- as needed

For outer batter

  • All purpose flour - 1 cup
  • Salt  - 1/2 tsp
  • Sugar - 1 tbsp
  • Turmeric powder- 1/2 tsp
  • Cardamom powder 1 pinch
  • Water - as needed
Oil- -  for deep frying





Method

  1. Prepare  a thick batter by mixing all purpose flour, turmeric powder salt, sugar, cardamom powder ,rice flour adding adequate amount of water. The batter should not be too thin or thick.Keep aside.
  2. Soak Green gram in water for about 5 hrs.
  3. Pressure cook it adding a pinch of salt and adequate water(2 whistles) .It should not be overcooked.
  4. Open the cooker and add  jaggery syrup and mix till all water is evaporated.
  5. Add cardamom powder, grated coconut and ghee and mix well.
  6. Allow to cool.
  7. Make lemon sized balls of this mixture.
  8. Dip it in the flour batter and fry on hot oil till outer sides are crispy and golden.
  9. Serve with hot tea.
