Ghee Rice (Neychoru)




Ingredients

  • Basmati rice -1 cup
  • Boiling Water -2 cups
  • Ghee - 3 tbsp
  • Onions -1(sliced thin)
  • Cashew
  • Raisins
  • Salt


Whole Spices
-------------------

  • Green cardamom - 3
  • Black cardamom - 1
  • Cinnamon stick - 1
  • Star anise (Thakkolam) - 1
  • Cloves - 4
  • Bay Leaves -1

Method
----------------

  1. Soak  rice in water for half an hour and drain .
  2. Heat 3 tbsp ghee in a pan and fry half of the onions till  dark brown and keep aside .(You can add a pinch of sugar to caramelise the onions easily)
  3. Fry the nuts and raisins and keep aside.
  4. To the pan add  whole spices and saute for a while .Then add half of finely sliced onions and saute till it becomes light brown .
  5. Add 1/4 tsp ginger garlic paste and saute till raw smell disappears.
  6. .Now add the drained rice and saute till the crackling sound stops(about 5 mins)
  7. Meanwhile boil water in another pan with salt.
  8. Add boiled water to the rice.Close lid.Heat in high flame for 5 mins and then in med to low till the rice is done
  9. Garnish with fried onions, nuts and raisins
