Whole chicken (Cornish hen) - 1

To Marinate
---------------

  • Turmeric powder - 1/4 tsp
  • Chilli powder - 2tsp
  • Pepper powder - 1/4 tsp
  • Ginger garlic paste -1/2 tsp
  • Lemon juice -1 tsp
  • Salt - 1/2 tsp


For filling
------------

  • Boiled Egg -1
  • Onion - 1 sliced
  • Green chilli -1 chopped
  • Turmeric powder - 1/4 tsp
  • Chilli powder - 1tsp
  • Pepper powder - 1/4 tsp
  • Ginger garlic paste -1/2 tsp
  • Garam Masala powder -1/4 tsp
  • Curry Leaves
  • Oil - 2tbsp
  • Salt - to taste
  • Cashew - 2 tbsp
  • Raisins -1 tbsp


Method for preparing the Filling
----------------------------------------------

  1. Heat a pan .Add oil.Fry cashew and raisins and set aside .
  2. Saute onion, green chilli, curry leaves till it becomes brown.
  3. Add ginger garlic paste and saute till raw smell disappears.
  4. Add salt and all powders and saute again.
  5. Add boiled egg, fried raisins and cashew and mix well.


Method
----------

  1. Clean chicken and marinate with the ingredients given in "To marinade" section for overnight or    minimum 2 hrs
  2. Fill the chicken with the Filling prepared above. Drop the egg first  into the cavity and then the  filling.Take care not to overstuff the filling. 
  3. Tie the  legs of chicken with a thread
  4.  Shallow fry the chicken till golden brown  flipping each side after 5 mins.

For Gravy
---------------

  • Onion - 2 sliced
  • Green chilli -2 chopped
  • Tomato -1 small
  • Turmeric powder - 1/4 tsp
  • Chilli powder - 21/2tsp
  • Pepper powder - 1/2 tsp
  • Ginger garlic paste -1/2 tsp
  • Garam Masala powder -1/4 tsp
  • Curry Leaves
  • Coriander Leaves - 1 handful
  • Salt - to taste



Method for preparing the Gravy
---------------------------------------

  1. Heat a pan .Add little left over oil used for frying chicken.
  2. Saute onion , green chilli, curry leaves till it becomes brown.
  3. Add ginger garlic paste and saute till raw smell disappears.
  4. Add salt and all powders and saute again.
  5. Add chopped tomatoes and coriander leaves and saute until they becomes mushy.


Final setting
--------------------

  1. Preheat the oven at 350F .
  2. Take a baking pan.Spread half of gravy .
  3. Place the fried chicken and coat it with the rest of the gravy.
  4. Cover the pan with an aluminium foil and bake for 40 minutes flipping each side after 20 mins.
  5.  Put the oven in "Broil "mode for the last 10 mins .
  6. Take out and garnish with fried nuts and caramelised onions
  7. Tastes best with ghee rice,vattayappam,bread,appam .
