Tender Coconut Pudding (Elaneer /Karikku Pudding)





Ingredients

  • Tender Coconut(Elaneer /Karikku ) - 1 cup
  • Tender Coconut Water -1 and 1/2 cup
  • Milk - 2 1/2 cup
  • Condensed Milk - 3/4 cup
  • Sugar - 1/2 cup
  • China Grass - 5 gms



Method

  1. Blend karikku with 1/4 cup sugar and 1/2 cup tender coconut water .(It should not be paste.There should be some bits to bite).
  2. Soak china grass in 1 cup Tender Coconut Water.
  3. In a pan boil milk with 3/4 cup condensed milk and sugar if needed.Keep stirring till the mixture gets slightly thickened. Switch off the flame and allow to cool
  4. .Meanwhile in another pan heat the soaked china grass in Tender Coconut Water till it completely dissolves. 
  5. Cool slightly and add to milk mixture.Both the mixtures should be of same temperature while mixing otherwise it will turn turbid.
  6. When it is almost cooled add pureed tender coconut pieces to this and mix well.
  7.  Freeze for 1/2 an hour and then refrigerate for 3 hrs.
