Pistachio Almond Biscotti





Ingredients

  • All purpose flour - 11/2 cup
  • Baking powder - 1/2 tsp
  • Eggs -1
  • Egg white -1
  • Vanilla essence -1/2 tsp
  • Sugar- 1/2 cup
  • Butter -  1/2 stick
  • Salt- 1/4 tsp
  • Finely chopped Pistachio and Almond - 1 cup

Method

  1. Preheat an oven at 350F (180C). 
  2. Sieve together flour,salt,baking powder well .
  3. Beat butter , sugar and vanilla extract until fluffy.
  4. Add  1  whole egg and egg white and beat well.
  5. Now gently fold in the dry ingredients little by little  to make a smooth sticky dough.
  6. Add in the chopped  almonds and pistachios.
  7. Make a log of 9 inch length and 3 inch width and place on a parchment paper lined baking tray.
  8. Bake for 30- 35 mins until light brown.
  9. Take out the tray and allow to cool for 5 mins.
  10. Cut the loaf into small pieces and spread on a parchment paper lined baking tray.
  11. Reduce temperature to 325F and bake  one side for 8 mins.
  12. Flip  the other side and again bake for 8 mins.
  13. Take out of oven and allow to cool completely
  14. Store in airtight containers.










Notes
-------
  1. The baking time depends on the oven .
  2. Allow the log to cool a bit before cutting , else it will break off.
  3. The second baking time varies from 8 to 10 min.
  4. You can add any nuts of your choice.
  5. If you like the flavor of caraway/Anise seeds, you can add a pinch of that while mixing.
