Achinga (Long Bean) Mezhukkupuratti
Ingredients

- Achinga Payar (Long bean) - 1 cup
- Shallots - 1/4 cup (chopped)
- Curry Leaves
- Mustard seeds- 1/4 tsp
- Green Chilli - 2 slit
- Red chilli powder - 1/2 tsp
- Turmeric Powder - 1/4 tsp
- Salt - To taste
- Water - 1/4 cup
Method

- Cut payar into 1 inch long pieces.
- Cook it with salt, water and green chilli until done.
- Heat a pan. Add oil and splutter mustard seeds.
- Saute chopped shallots, curry leaves until brown.
- Add chilli and turmeric powder and saute .
- Add cooked payar and saute for 5 mins.
- Serve hot with rice.
