Pistachio Almond Biscotti
Ingredients

- All purpose flour - 11/2 cup
- Baking powder - 1/2 tsp
- Eggs -1
- Egg white -1
- Vanilla essence -1/2 tsp
- Sugar- 1/2 cup
- Butter - 1/2 stick
- Salt- 1/4 tsp
- Finely chopped Pistachio and Almond - 1 cup
Method

- Preheat an oven at 350F (180C).
- Sieve together flour,salt,baking powder well .
- Beat butter , sugar and vanilla extract until fluffy.
- Add 1 whole egg and egg white and beat well.
- Now gently fold in the dry ingredients little by little to make a smooth sticky dough.
- Add in the chopped almonds and pistachios.
- Make a log of 9 inch length and 3 inch width and place on a parchment paper lined baking tray.
- Bake for 30- 35 mins until light brown.
- Take out the tray and allow to cool for 5 mins.
- Cut the loaf into small pieces and spread on a parchment paper lined baking tray.
- Reduce temperature to 325F and bake one side for 8 mins.
- Flip the other side and again bake for 8 mins.
- Take out of oven and allow to cool completely
- Store in airtight containers.
Notes
-------
- The baking time depends on the oven .
- Allow the log to cool a bit before cutting , else it will break off.
- The second baking time varies from 8 to 10 min.
- You can add any nuts of your choice.
- If you like the flavor of caraway/Anise seeds, you can add a pinch of that while mixing.
