Yellow Rice
Ingredients

- Basmati rice -1 cup
- Water -2 cups
- Ghee - 3 tbsp
- Saffron - 1 pinch
- Turmeric Powder -1/2 tsp
- Onions -1(sliced thin)
- Salt
Whole Spices

- Green cardamom - 3
- Black cardamom - 1
- Cinnamon stick - 1
- Star anise (Thakkolam) - 1
- Cloves - 4
- Bay Leaves -1
Method

- Soak rice in water for half an hour and drain .
- Heat 3 tbsp ghee in a pan
- Add whole spices and saute till a nice aroma comes.
- Saute thinly slice onions till brown
- Now add the drained rice and saute till the crackling sound stops(about 5 mins)
- Meanwhile boil water in another pan with salt and turmeric powder.
- Add boiled water to the rice.Close lid.Heat in high flame for 5 mins and then in med to low till the rice is done
- Dissolve saffron in little milk and add to rice and mix well.
- Serve hot with kebabs or any non veg recipes and salads.
