Yellow Rice






Ingredients

  • Basmati rice -1 cup
  • Water -2 cups
  • Ghee - 3 tbsp
  • Saffron - 1 pinch
  • Turmeric Powder -1/2 tsp
  • Onions -1(sliced thin)
  • Salt


Whole Spices

-------------------
  • Green cardamom - 3
  • Black cardamom - 1
  • Cinnamon stick - 1
  • Star anise (Thakkolam) - 1
  • Cloves - 4
  • Bay Leaves -1



Method

  1. Soak  rice in water for half an hour and drain .
  2. Heat 3 tbsp ghee in a pan 
  3. Add whole spices and saute till a nice aroma comes.
  4. Saute thinly slice onions till brown
  5. Now add the drained rice and saute till the crackling sound stops(about 5 mins)
  6. Meanwhile boil water in another pan with salt and turmeric powder.
  7. Add boiled water to the rice.Close lid.Heat in high flame for 5 mins and then in med to low till the rice is done
  8. Dissolve saffron in little milk and add to rice and mix well.
  9. Serve hot with kebabs or any non veg recipes and salads.
