Butternut Squash Vanpayar (Red Bean) thoran






Ingredients

  • Butternut Squash (cut into small cubes)- 1 cup
  • Onion chopped - 2 tbsp
  • Green chilli -1
  • Curry Leaves
  • Mustard seeds-1/2 tsp
  • Red Chilli  - 1
  • Turmeric Powder - 1/4 tsp
  • Oil- 1 tsp
  • Salt - To taste
  • Cooked Red Bean - 1/4 cup

To Grind (Coarse)

  • Coconut - 1/4 cup
  • Pearl Onion-2 nos
  • Jeera (Cumin) -1 pinch
  • Salt - 1 pinch

Method
------------
  1. Cook the cubed squash with salt, green chilli and turmeric powder.
  2. In a pan add oil. Splutter mustard seeds,red chilli and curry leaves.
  3. Add chopped onions little salt and saute until translucent
  4. Add cooked  squash and red bean and mix well
  5. Add grounded coconut mixture and saute for 2 mins
  6. Serve hot with rice
