Achinga (Long Bean) Thoran
Ingredients

- Achinga (Long Bean) - 1 cup (chopped)
- Onion Chopped - 1/4 cup
- Green Chilli -1 (chopped)
- Curry Leaves - few
- Dried Red Chilli - 1
- Turmeric Powder - 1/4 tsp
- Oil- 1 tbsp
- Salt - To taste
- Water - 1/4 cup
To Grind (Coarse)

- Coconut - 1/4 cup
- Pearl Onion - 1 nos
- Jeera (Cumin) -1 pinch
- Turmeric Powder - 1/4 tsp
- Salt - 1 pinch
Method
------------
- In a pan cook achinga with salt ,green chilli, turmeric powder and water until it is cooked and water has evaporated.
- In another pan add oil. Splutter red chilli ,curry leaves.
- Add chopped chopped onions until onion gets light brown.
- Add cooked achinga and mix well.
- Add grounded coconut mixture and saute for 2 mins.
- Add 1 tsp coconut oil and sprinkle some curry leaves.
- Serve hot with rice.
