Achinga (Long Bean) Thoran





Ingredients

  • Achinga (Long Bean) - 1 cup (chopped)
  • Onion Chopped - 1/4 cup
  • Green Chilli -1 (chopped)
  • Curry Leaves - few
  • Dried Red Chilli   - 1 
  • Turmeric Powder - 1/4 tsp
  • Oil- 1 tbsp
  • Salt - To taste
  • Water - 1/4 cup

To Grind (Coarse)

  • Coconut - 1/4 cup
  • Pearl Onion  - 1 nos
  • Jeera (Cumin) -1 pinch
  • Turmeric Powder - 1/4 tsp
  • Salt - 1 pinch


Method
------------
  1. In a pan cook achinga with salt ,green chilli, turmeric powder and water until it is cooked and water has evaporated.
  2. In another pan add oil. Splutter red chilli ,curry leaves. 
  3. Add chopped chopped onions until onion gets light brown.
  4. Add cooked achinga and mix well.
  5. Add grounded coconut mixture and saute for 2 mins.
  6. Add 1 tsp coconut oil and sprinkle some curry leaves.
  7. Serve hot with rice.
