Kulfi
"Kulfi"is popularly known as the "traditional Indian ice cream" originated from the Mughals. It is made with milk and sugar, and flavored with saffron and cardamom powder and topped with nuts and are poured into moulds and frozen till set.Though this recipe takes a bit of your time to make, it is worth at the end.
Ingredients

- Milk - 1 litre
- Cold Milk - 1/4 cup
- Condensed Milk - 1/2 cup
- Saffron - 1 pinch
- Sugar - 6 tbsp
- Cardamom Powder - 1/4 tsp
- Cornflour - 2 tbsp
- Chopped Nuts - 1 cup (almonds , pista)
Method

- In a wide bottomed pan boil milk .Keep stirring until the quantity of milk reduces to half (ie from 1 litre to 500 ml).
- Reserve 2 tbsp of milk from this and mix it with saffron and keep aside.
- Add condensed milk and sugar and stir continuously.
- Add saffron milk mixture to this and mix well.
- Dissolve 2 tbsp cornflour in 1/ cup cold milk and pour to the boiling milk stirring continuously in low flame till the mixture gets slightly thickened. Switch off the flame and allow to cool.
- When it is almost cooled add chopped nuts to this and mix well.
- Pour into kulfi moulds or a tray .
- Freeze it until it is completely set.
- When it is completely set, demould it and sprinkle the top with chopped pistachios.
Notes
--------
- You can increase or decrease the quantity of sugar to your taste.
- Dissolve cornflour in cold milk so that no lumps are formed.
- Instead of cornflour, you can also use rice flour.
- When adding this mixture, keep the flame in very low and stir continuously else lumps will be formed.
