Mambazha Pulisheri / Mambazha Kaalan
Mambazha Pulisheri/Mambazha Kaalan is sweet and sour authentic recipe of Kerala made with ripe mangoes, curd and coconut. "Naattu Manga" works best for this recipe. If you don't have that you can use any other ripe mango.
Ingredients

- Ripe Mango - 2 nos ( if you are using naattu managa- 5 nos "chandrakarn mango" tastes best for this recipe)
- Green Chilli - 3
- Butter milk /Curd - 11/2 cup
- Turmeric Powder - 1 tsp
- Chilli Powder - 1/2 tsp
- Fenugreek powder -1/4 tsp
- Pepper Powder - 1/2 tsp
- Jaggery - 1 inch small piece(you can increase the quantity if you like it to be more sweet)
- Salt - To Taste
- Water - 1/2 - 3/4 cup
To grind to paste

- Coconut - 1/2 cup
- Jeera/cumin - 1 pinch

- Mustard seeds -1 tsp
- Fenugreek seeds -1/2 tsp
- Dried Red chilli -3
- Curry leaves - few
- Chilli Powder -1 pinch

- Grind coconut and cumin to a fine paste using very little water.
- In a pan cook sliced mango along with turmeric, chilli, pepper and fenugreek powder, green chilli and few curry leaves using enough water. (Since naatumanga is not available here I used normal ripe mango)
- When it is almost cooked ,add 1 small piece of jaggery and mix well.
- Add grounded coconut paste and mix well in medium flame.
- Reduce flame to low and add beaten curd and mix well.
- Immediately remove from fire.
- In another heated pan add oil. Add ingredients given in the section "To splutter".
- Pour over the curry.
- Serve hot with rice and mezhukkupuratti.

- The curd used to make kaalan should be sour.
- Do not heat too much after pouring the curd, else it will curdle.
