Kerala Egg Curry with Coconut Milk (Naadan Mutta Curry)




Ingredients

  • Boiled Eggs- 3
  • Onion -1 (thinly sliced lengthwise)
  • Green chill - 4 (slit into 2)
  • Tomato - 1/2 small (sliced lengthwise)
  • Ginger - 1 inch piece (chopped)
  • Garlic- 4  big pods  (chopped)
  • Turmeric Powder -1 tsp
  • Coriander Powder - 2 tsp
  • Crushed Pepper powder -1/4 tsp
  • Garam Masala Powder - 1/2 tsp
  • Cloves - 1
  • Cardamom - 2
  • Curry Leaves - a handful
  • Coconut milk - 1 cup
  • Water - 1/2 cup
  • Coconut Oil - 1 tbsp +1tsp
  • Salt - to taste


Method

  1. In a heated pan add oil. Add cloves and cardamom and saute for a  few seconds.
  2. Add chopped ginger and garlic and saute till a nice aroma appears.
  3. Add sliced onion, green chilli, curry leaves  saute till onion becomes translucent.
  4. Add salt, turmeric, coriander powders and and mix well.
  5. Add 1/4 cup water . Cover and cook till gravy becomes thick
  6. Split the boiled eggs into two.
  7. Add eggs and cover and cook for 5 mins.
  8. Reduce the flame and add co coconut milk and simmer for  2 mins.
  9. Add sliced tomato,curry leaves 1 tsp coconut oil and crushed pepper powder at top.
  10.  Tastes best with bread ,chapati,puttu, idiyappam and palappam.
