Kerala Egg Curry with Coconut Milk (Naadan Mutta Curry)
Ingredients

- Boiled Eggs- 3
- Onion -1 (thinly sliced lengthwise)
- Green chill - 4 (slit into 2)
- Tomato - 1/2 small (sliced lengthwise)
- Ginger - 1 inch piece (chopped)
- Garlic- 4 big pods (chopped)
- Turmeric Powder -1 tsp
- Coriander Powder - 2 tsp
- Crushed Pepper powder -1/4 tsp
- Garam Masala Powder - 1/2 tsp
- Cloves - 1
- Cardamom - 2
- Curry Leaves - a handful
- Coconut milk - 1 cup
- Water - 1/2 cup
- Coconut Oil - 1 tbsp +1tsp
- Salt - to taste
Method

- In a heated pan add oil. Add cloves and cardamom and saute for a few seconds.
- Add chopped ginger and garlic and saute till a nice aroma appears.
- Add sliced onion, green chilli, curry leaves saute till onion becomes translucent.
- Add salt, turmeric, coriander powders and and mix well.
- Add 1/4 cup water . Cover and cook till gravy becomes thick
- Split the boiled eggs into two.
- Add eggs and cover and cook for 5 mins.
- Reduce the flame and add co coconut milk and simmer for 2 mins.
- Add sliced tomato,curry leaves 1 tsp coconut oil and crushed pepper powder at top.
- Tastes best with bread ,chapati,puttu, idiyappam and palappam.
