Vettu Cake / Fried Cake
" Vettu Cake" is a popular snack available in Kerala tea-shops that is served along with tea (Chaaya- kada Palahaaram). It is very easy snack that can be made without much effort and a perfect one that can be relished with "Chai".
Ingredients

- All Purpose Flour / Maida - 1 1/4 cup
- Egg -1
- Sugar - 1/2 cup
- Turmeric Powder - 1 pinch
- Baking powder - 1/4 tsp
- Ghee - 1 tsp
- Salt - 1/4 tsp
- Cardamom Powder - 1 pinch
- Water - As required
- Oil - As Required to fry
Method

- Sieve flour, baking powder, salt and cardamom powder.
- Beat egg and sugar well until the sugar dissolves completely.
- Make well in the center of the flour mixture and pour the egg sugar mixture.
- Kneed well adding water little by little so as to make a smooth dough and smear 1 tsp ghee at the top.
- Cover with a cling wrap and allow to rest for at-least 30 mins.
- After 30 mins roll the dough to a long cylindrical pipe.
- Cut it into 11/2 inch square pieces.
- Make a small incision vertically and horizontally to each square piece so that it cuts almost 3/4 the part o f the cake.
- Heat oil in a kadai.
- In medium flame , fry the cake pieces.When one side turns golden brown flip the other side.
- Drain the fried cake pieces put them in a paper towel.
- Serve hot with tea.
Notes
--------
- Make sure you make the cuts on the cake deep so that the oil gets inside and gets cooked properly.
- Do not over fry the cake because it becomes hard.
- If cooled properly and stored in air tight container this can be store for few days.
- Fry the cake on medium flame so that it gets properly cooked inside.
