Fish Kedgeree



"Kedgeree" is a British breakfast  made with cooked rice, smoked fish (traditionally smoked haddock), butter, curry-powder, parsley and cilantro and served with hard boiled eggs and lemon wedges.This dish has its roots from our Indian food " khichdi/kitcherie"- the rice and lentil combination along with some spices and curry powder.




Ingredients

  • Fish - 500 gm (smoked fish)
  • Ginger garlic paste - 1/2 tsp
  • Green Chilli - 2 chopped
  • Pepper Powder - 1 tsp
  • Turmeric Powder - 2 tsp
  • Chilli powder - 1 tbsp
  • Coriander powder- 1 tsp
  • Curry Powder - 1tbsp
  • Frozen peas - 1/2 cup (optional)
  • Onion - 1 sliced
  • Parsely - a handful
  • Cilantro - a handful
  • Salt - to taste
  • Oil- 4 tbsp
  • Lemon - 1/2
  • Basmati rice - 1 cup
  • Water - 2 cup
  • Butter - 1 tbsp
  • Cardamom - 3 pods
  • Hard boiled eggs- 3



Method

  1. Clean and cut fish to medium sized pieces and marinate with little salt,1 tsp pepper powder, 1 tsp chilli  and 1/2 tsp turmeric powder and keep aside for 20 mins. (I personally don't like the taste of smoked fish so I have slightly marinated and fried the fish in this recipe. If you like the taste of smoked fish you can use them directly it in this recipe.)
  2. In a pan add oil and slightly fry fish pieces. Drain and keep aside.
  3. In a wide bottomed pan add butter.When it melts add turmeric,coriander, chilli, pepper and curry powder ,salt and saute for a while.
  4. When  the raw smell disappears add sliced onions  and green chilli and saute till it gets wilted.
  5. Add frozen peas and saute for a while.
  6. Add  fried fish (or smoked) pieces and mix gently so that the masala is well coated in fish.
  7. Add cooked rice and fluff gently.
  8. Last add chopped parsely and corinader leaves.
  9. Serve with quarterly splitted hard boiled eggs and lemon wedges.
  10. This rice goes well with onion cucumber raita.



Notes
---------
  • You can add fish stock instead of water for cooking the rice.This enhances the flavor of the kedgeree.
