Liver Pepper Fry (Karal Kurumulakittu Varattiyathu)







Ingredients

  • Chicken Liver - 400 gm 
  • Onion - 1 medium (finely sliced to small pieces)
  • Pearl Onion- 1 cup (sliced)
  • Green Chilli - 2 (chopped)
  • Ginger garlic paste -1 tbsp
  • Turmeric powder - 2 tsp
  • Red Chilli powder - 1 tbsp
  • Coriander powder -2 tbsp
  • Freshly crushed pepper powder -11/2 tbsp
  • Cumin Powder - 1/2 tsp
  • Garam Masala Powder -11/2 tsp
  • Curry Leaves
  • Salt - to taste
  • Oil 



Method
----------
  1. Soak the liver pieces in turmeric water for atleast half an hour.
  2. In a heated  pan add oil .
  3. Add ginger garlic paste and saute till raw smell disappears followed by curry leaves.
  4. Add chopped onion and pearl onions and green chilli and saute till brown.
  5. Add chilli, coriander, turmeric, pepper powder and saute well.
  6. Add cleaned liver pieces and mix till the masala is well coated on liver pieces.
  7. Cover with lid and cook for 8- 10 mins.(No need to add water as water will ooze out ).
  8. When the liver is 3/4 th cooked add salt and mix well.
  9. Add little garam masala powder  and 1 tsp crushed pepper powder at top
  10. Serve hot with rice, roti, chapathi, appam etc.



Notes
---------
  1. Soaking the liver i n turmeric water or vinegar water as helps to eliminate the toxins , smell and blood.
  2. Add salt only when the liver is almost cooked. Else it will turn hard.
  3. Do not cook liver too long as it will turn rubbery in texture.
  4. Pearl onions gives nice taste to this recipe.
  5. Add freshly crushed pepper as it enhances the taste.
