Liver Pepper Fry (Karal Kurumulakittu Varattiyathu)
Ingredients

- Chicken Liver - 400 gm
- Onion - 1 medium (finely sliced to small pieces)
- Pearl Onion- 1 cup (sliced)
- Green Chilli - 2 (chopped)
- Ginger garlic paste -1 tbsp
- Turmeric powder - 2 tsp
- Red Chilli powder - 1 tbsp
- Coriander powder -2 tbsp
- Freshly crushed pepper powder -11/2 tbsp
- Cumin Powder - 1/2 tsp
- Garam Masala Powder -11/2 tsp
- Curry Leaves
- Salt - to taste
- Oil
Method
----------
- Soak the liver pieces in turmeric water for atleast half an hour.
- In a heated pan add oil .
- Add ginger garlic paste and saute till raw smell disappears followed by curry leaves.
- Add chopped onion and pearl onions and green chilli and saute till brown.
- Add chilli, coriander, turmeric, pepper powder and saute well.
- Add cleaned liver pieces and mix till the masala is well coated on liver pieces.
- Cover with lid and cook for 8- 10 mins.(No need to add water as water will ooze out ).
- When the liver is 3/4 th cooked add salt and mix well.
- Add little garam masala powder and 1 tsp crushed pepper powder at top
- Serve hot with rice, roti, chapathi, appam etc.
Notes
---------
- Soaking the liver i n turmeric water or vinegar water as helps to eliminate the toxins , smell and blood.
- Add salt only when the liver is almost cooked. Else it will turn hard.
- Do not cook liver too long as it will turn rubbery in texture.
- Pearl onions gives nice taste to this recipe.
- Add freshly crushed pepper as it enhances the taste.
