Thenga Aracha Mutta Curry (Egg Curry in Coconut Gravy)






Ingredients

  1. Boiled Eggs- 3
  2. Green chilli - 2 (slit into 2)
  3. Ginger - 1/2 inch piece (chopped)
  4. Garlic- 2  big pods  (chopped)
  5. Turmeric Powder - 1/4 tsp
  6. Pepper corns - 1 tsp
  7. Cumin -1 pinch
  8. Fennel seeds - 1 pinch (optional)
  9. Chicken Masala  Powder- 1 1/2 tsp
  10. Garam Masala Powder - 1 /2 tsp
  11. Curry Leaves -  few
  12. Grated Coconut  - 3/4 cup
  13. Water - 1 cup
  14. Coconut Oil - 2 tbsp
  15. Salt - to taste



Method

  1. Grind together ingredients numbered 3 to 10 to fine paste using little water.
  2. In a heated pan add oil.
  3. Saute  green chilli, curry leaves for 1 min.
  4. Add grounded coconut  masala paste and saute for few mins.
  5. Add boiled egg and water.
  6. Cover and cook till gravy becomes thick.
  7. Add 1 tsp coconut oil and fresh curry leaves at top.
  8. Tastes best with wheat dosa (godambu dosa).
