Potato Stew




Ingredients

  • Potato - 1 Cubed
  • Onion - 1/2 ( thinly sliced)
  • Green Chilly - 4 (slit into 2)
  • Curry Leaves - few
  • Ginger - 1 tsp (chopped)
  • Turmeric Powder - 1tsp
  • Chilli Powder - 1/4 tsp
  • Curry leaves - few
  • Thin coconut milk - 1 cup
  • Thick coconut milk  - 1/2 cup
  • Water - 1 cup
  • Oil - 1 tbsp
  • Salt - to taste
To Splutter

  • Mustard seeds - 1 tsp
  • Red Chilli - 2
  • Curry Leaves - 1 spring
  • Red chilli powder - 1 pinch



Method
-------------
  1. In a pressure cooker add potato,sliced onion, green chilly, curry leaves ,water, turmeric powder, chilli powder ,salt and cook for 1  whistle.
  2. When pressure is released, open lid and gently mash  half of the potatoes.The other half  should remain cubed. 
  3. Add thin coconut milk and bring to boil.
  4. Now reduce flame to low  and add thick coconut milk.Switch off and keep aside.
  5. In another pan add 1 tsp oil and  splutter the ingredients given in the section " To splutter".
  6. Pour over the curry.
  7. Tastes best with palappam,appam, bread, porotta etc.
