Potato Stew
Ingredients

- Potato - 1 Cubed
- Onion - 1/2 ( thinly sliced)
- Green Chilly - 4 (slit into 2)
- Curry Leaves - few
- Ginger - 1 tsp (chopped)
- Turmeric Powder - 1tsp
- Chilli Powder - 1/4 tsp
- Curry leaves - few
- Thin coconut milk - 1 cup
- Thick coconut milk - 1/2 cup
- Water - 1 cup
- Oil - 1 tbsp
- Salt - to taste

Method

- In a pressure cooker add potato,sliced onion, green chilly, curry leaves ,water, turmeric powder, chilli powder ,salt and cook for 1 whistle.
- When pressure is released, open lid and gently mash half of the potatoes.The other half should remain cubed.
- Add thin coconut milk and bring to boil.
- Now reduce flame to low and add thick coconut milk.Switch off and keep aside.
- In another pan add 1 tsp oil and splutter the ingredients given in the section " To splutter".
- Pour over the curry.
- Tastes best with palappam,appam, bread, porotta etc.
