Mixed Stir Fried Rice









Ingredients

  • Basmati rice -1 cup
  • Chicken - 100 gm
  • Prawns - 100 gm
  • Egg - 2
  • Boiling Water -2 cups
  • White Onion - 1 (sliced)
  • Beans - 7 (sliced)
  • Yellow and green bell peppers (sliced) - 1/2 cup
  • Carrot - 1 (sliced)
  • Red chilli - 2
  • Celery chopped - 2 tbsp
  • Spring onion - chopped
  • Garlic chopped - 1 tbsp
  • Ginger  garlic Paste - 1 tsp
  • Red Chilli Flakes - 1 tsp
  • Soy sauce - 1 tbsp
  • Oyster Sauce - 1 tbsp
  • Tomato Sauce - 1tsp
  • Madras Curry Powder - 1/2 tsp
  • Honey - 1 tsp
  • Green chilli - 1 chopped
  • Salt - To taste
  • Olive oil - 3 tbsp



To Marinate

  • Ginger  garlic Paste - 1/4 tsp
  • Turmeric powder - 1 tsp
  • Chilli powder - 1 tbsp
  • Pepper Powder - 1/2 tsp
  • Salt -to taste
  • Lemon juice - 1 tsp



Method

  1. Soak  rice in water for half an hour and drain .
  2. Cook rice with enough salt by adding boiling water .Drain and keep aside.
  3. Marinate chicken and prawns with little pepper, turmeric, chilli powders, salt and ginger garlic paste.
  4. In a  heated wok/ kadai add oil . Add marinated chicken and prawns and grill them in the pan until done and keep aside.
  5. In the same pan scramble 2 eggs with little salt and keep aside.
  6. Heat a pan in high flame and add  olive oil .
  7. Saute the red chilli, chopped garlic, celery and spring onion.
  8. When a nice aroma comes add sliced white onions and saute till it becomes translucent.
  9. Add  sliced beans, carrot , green chilli,bell peppers and  saute till they are half done.They should not be overcooked.
  10. Add soy sauce,  oyster sauce, tomato sauce, honey, red chilli flakes, madras curry powder salt and pepper powder.
  11. Add grilled chicken pieces, prawns and scrambled eggs and mix well.
  12. Add cooked rice and mix gently
  13. Garnish with chopped celery and spring onion, coriander leaves.
