Orange Marmalade

"Orange marmalade" is a fruit preserve which is made from the juice and peel of oranges. It is generally used as a spread for bread and toast and can also be used as toppings or even as an ingredient in some of the recipes. You can also try making marmalade  with any citrus fruits like lemon, grapefruits etc. Last week I  had a bag of oranges in my home  and I thought of making something new with them . So for all the Orange Lovers, here is the recipe of Orange Marmalade.....!!!!

Ingredients
--------------
  • Orange - 9 nos (small type) (nearly 700 gm)
  • Water - 3 cup
  • Sugar - 2 1/4 cup
  • Citric Acid - 3/4 tsp

Method
-----------
  1. Wash the oranges and drain well.
  2. Cut both ends of oranges to remove the thick skin.
  3. Slice them into very thin pieces.(Remove seeds)
  4. Put the sliced oranges in a steel bowl.
  5. Add water and cook for about 15 mins.
  6. When the skin of orange becomes soft and tender, add sugar and citric acid.
  7. Boil on high flame for about 20 mins.
  8. Remove the  scum that comes at top in between.
  9. Reduce the flame and cook for 10 more mins.
  10. You can check if the consistency is done by placing a spoon of marmalade on a chilled plate and allow to sit for 30 seconds. Make a separation in the middle of the drop with the spoon. When both portions stay apart  and don't join then it is the right consistency to switch off the flame. i.e, It should have a slight jelly consistency and not too watery.
  11. Switch off  and slightly cool.
  12. Pour to a clean glass jar and cover with lid when it is completely cooled.
  13. You can keep it outside or store in refrigerator if you want to store for longer period of time.
  14. Apply on bread, toast or you can apply as toppings .

Notes
-------
  1. The oranges should be very fresh and of good quality.
  2. Before starting the preparation, you can keep a plate on a freezer for chilling it and using for testing the consistency of marmalade.
  3. If the orange is too sweet , you can reduce the quantity of sugar and can add 1 tsp lemon juice also while boiling.
  4. Take care to remove the seeds of oranges.
  5. Initially the marmalade will be little watery but it will get thickened upon cooling.
  6. It is always better to take a steel container for preparing this since we are using citric acid.
