Mixed Egg and Veg Rice


Ingredients

  • Basmati rice -1 cup
  • Boiling Water -2 cups
  • Yellow onions - 1/2
  • French Beans - 7
  • Cooked Green Peas - 1/ cup
  • Red yellow and green bell peppers - 1/2 cup
  • Carrot 1
  • Red chilli - 2
  • Boiled Egg - 2
  • Celery chopped - 2 tbsp
  • Spring onion - chopped
  • Garlic chopped - 1 tbsp
  • Ginger  garlic Paste - 1 tsp
  • Red Chilli Flakes - 1 tsp
  • Soy sauce - 1 tbsp
  • Oyster Sauce - 1 tbsp
  • Honey - 1 tsp
  • Pepper Powder -1 tsp
  • Green chilli - 2 chopped
  • Salt - To taste
  • Olive oil - 3 tbsp


Method

  1. Cut all the veggies into same size pieces.
  2. Soak  rice in water for half an hour and drain .
  3. Cook rice with enough salt by adding boiling water .
  4. Heat a pan in high flame and add  olive oil .
  5. Saute the garlic, celery and spring onion and red chilli.
  6. When a nice aroma comes add onions and saute till it becomes translucent.
  7. Add  beans, carrot , green chilli saute till they are half done.They should be cooked but the crunchiness should be there.
  8. Add soy sauce,  oyster sauce, honey, red chilli flakes salt and pepper powder.
  9. Add cooked rice and mix gently
  10. Garnish with chopped celery and spring onion, coriander leaves
  11. Cut the boiled egg into small rounds and garnish at the top.
  12. It can be eaten alone as a meal or can be served with a curry and salad.
