Sesame Kadai Veg








Ingredients

  • Cooked veg - 1 cup (potato, carrot, beans, green peas)
  • Onion Cubed - 1/4 cup
  • Capsicum cubed - 1/4 cup
  • Onion - 1 1/2 (chopped)
  • Tomato (chopped) - 1/2 cup
  • Green chilly (slit lengthwise)  -  4
  • Ginger garlic paste - 1 tsp
  • Turmeric powder - 1/2 tsp
  • Kashmiri Chilly powder - 1 tbsp
  • Curry Leaves
  • Salt - to taste
  • Oil - 3 tbsp 
  • Kasoori Methi - 1 tsp(crushed)
  • Water -1/2 - 1 cup


To dry roast and grind

  • Dried Red Chilli - 3
  • Coriander Seeds -  1tsp
  • Whole Garam Masala - 1tsp
  • Peppercorns  - 1 tsp
  • Cumin - 1 tsp
  • Black Sesame seeds - 2 tsp
  • White Sesame seeds - 2 tsp

Method

  1. In a pan dry roast the ingredients in the given order and powder it into a coarse powder.
  2. In a kadai add oil.Saute onions till it becomes light brown. 
  3. Add ginger garlic paste , curry leaves ,green chilli and saute  for few minutes.
  4. Add  2 tbsp of crushed masala, turmeric and kashmiri chilli  powder and saute till raw smell disappears.
  5. Add chopped tomato and saute till oil starts oozing from the gravy.
  6. Add cubed onions and capsicum and saute for a while.
  7. Now add cooked vegetables and mix well. 
  8. Add 1/2 cup water .Cover and cook till gravy thickens
  9. Last add crushed kasuri methi and mix well.
  10. Sprinkle  little crushed masala over top.
  11. Garnish with chopped coriander leaves and sesame seeds.
