Sesame Kadai Veg
Ingredients

- Cooked veg - 1 cup (potato, carrot, beans, green peas)
- Onion Cubed - 1/4 cup
- Capsicum cubed - 1/4 cup
- Onion - 1 1/2 (chopped)
- Tomato (chopped) - 1/2 cup
- Green chilly (slit lengthwise) - 4
- Ginger garlic paste - 1 tsp
- Turmeric powder - 1/2 tsp
- Kashmiri Chilly powder - 1 tbsp
- Curry Leaves
- Salt - to taste
- Oil - 3 tbsp
- Kasoori Methi - 1 tsp(crushed)
- Water -1/2 - 1 cup
To dry roast and grind

- Dried Red Chilli - 3
- Coriander Seeds - 1tsp
- Whole Garam Masala - 1tsp
- Peppercorns - 1 tsp
- Cumin - 1 tsp
- Black Sesame seeds - 2 tsp
- White Sesame seeds - 2 tsp
Method

- In a pan dry roast the ingredients in the given order and powder it into a coarse powder.
- In a kadai add oil.Saute onions till it becomes light brown.
- Add ginger garlic paste , curry leaves ,green chilli and saute for few minutes.
- Add 2 tbsp of crushed masala, turmeric and kashmiri chilli powder and saute till raw smell disappears.
- Add chopped tomato and saute till oil starts oozing from the gravy.
- Add cubed onions and capsicum and saute for a while.
- Now add cooked vegetables and mix well.
- Add 1/2 cup water .Cover and cook till gravy thickens
- Last add crushed kasuri methi and mix well.
- Sprinkle little crushed masala over top.
- Garnish with chopped coriander leaves and sesame seeds.
