Poori Masala





For Poori

Ingredients
---------------
  • Atta/Wheat flour - 1 cup
  • Semolina/ Sooji /Rava - 1 tbsp
  • Water -  Nearly 1/2 cup
  • Salt - To taste
  • Oil - 1 tbsp + For Frying


Method

------------
  1. Take  wheat flour in a wide mouthed bowl.
  2. Add 1 tbsp of sooji /semolina to it and mix well.
  3. Add 1 tbsp oil and mix the flour well with your hands.
  4. Dissolve salt in hot water.
  5. Add water little at a time to the  flour and knead well to make a tight dough.
  6. Grease the dough with little oil on top and  keep aside for 20 minutes .
  7. Make gooseberry sized balls and dust in flour and roll in a rolling pan to make small rounds of even thickness.
  8. Heat a kadai and add oil.
  9. When the oil turns really hot ,add the rolled  poori to it and gently press with a spatula.
  10. When one side turns brown flip the other side.
  11.  When both sides are brown take out and serve hot with masala.

Notes
------------
  1. Adding semolina to wheat flour gives crispy pooris.
  2. Adding 1 tbsp oil initially prevents the poori from absorbing too much oil.
  3. Always make the dough slightly tighter than the chapatti dough.
  4. The oil should be really hot.Then only the pooris will rise well.
  5. Take care to roll the pooris evenly.Uneven rolled dough results in flat pooris.
  6. Gently press the pooris with a spatula after putting in oil. This causes the air to expand and gives really fluffed up pooris.




For Masala

  • Potato - 1
  • Carrot - 1
  • Cooked Green Peas - 1/4 cup
  • Onion - 1/2 medium (thinly sliced)
  • Green Chilli - 3 (slit)
  • Turmeric Powder -  1 tsp
  • Mustard Seeds - 1 tsp
  • Urad dal - 1 tbsp
  • Dried Red Chilli - 2
  • Curry Leaves - few
  • Ginger (Chopped) - 1 tsp
  • Salt
  • Water - 1 cup
  • Oil - 2 tbsp

Method
----------
  1. Cut potato and carrot to medium sized cubes.
  2. In a pressure cooker, add potato, carrot, green peas, green chilli, turmeric powder , salt and water.
  3. Cover and cook for 1 whistle.
  4. When pressure is released gently mash it.
  5. Heat a kadai and add oil.
  6. Splutter mustard seeds, urad dal, red chilli and curry leaves.
  7. Add chopped ginger , sliced onions and saute till translucent.
  8. Add a pinch of turmeric powder and mix well.
  9. Pour the cooked mashed potato mix to it ad gently mix.
