Pineapple kichadi (Madhura curry)






Ingredients

  • Pineapple - 2 cup (Finely chopped)
  • Black Grapes - 6 nos
  • Green chilli -2
  • Curry Leaves
  • Turmeric Powder - 1/2 tsp
  • Chilli Powder - 1 tsp
  • Jaggery - 1 small piece
  • Salt - To taste

To Grind (Coarse)

  • Coconut - 1/2 cup
  • Jeera (Cumin) -1 pinch
  • Turmeric Powder - 1/4 tsp
  • Green Chilly - 1
  • Salt - 1 pinch
To dry roast and temper
----------------------------------
  • Mustard seeds-1/2 tsp
  • Red Chilli  - 2
  • Coconut - 1/4 cup
  • Curry Leaves -few
  • Oil

Method
------------
  1. Cook the pineapple in a pan adding salt, green chilli and turmeric and chilli powder.(there is no need to add water  as it will ooze out from the pineapple)
  2. Once  pineapple is cooked and the water content is gone, add  a piece of jaggery to it .The amount of sweetness can be increased or decreased according to your taste.
  3. Grind  ingredients given in "To Grind " section to a fine paste.
  4. Add grounded coconut mixture  to the cooked pineapple mix well.
  5. In a pan add oil. Splutter mustard seeds, red chilli and curry leaves.
  6. Add  coconut and fry till coconut turns dark brown.
  7. Add this on top of pineapple mixture and mix well .
  8. Last add grapes and cover with lid.
