Beef Peralan





Ingredients

  • Beef - 500 gm (I used stew meat)
  • Onion - 2 (finely chopped)
  • Tomato - 1 small (chopped)
  • Ginger - 1 inch piece
  • Garlic - 7 cloves
  • Green Chilli - 4
  • Turmeric powder - 1 tsp
  • Red Chilli powder - 1 tbsp
  • Coriander powder - 1 tbsp
  • Curry Leaves
  • Red Chilli (dried) - 2
  • Mustard Seeds -1 tsp
  • Salt - to taste
  • Coconut Oil - 4 tbsp

To dry roast and grind

  • Cinnamon -1 small stick
  • Cloves - 2
  • Cardamom -3
  • Whole pepper corns -10
  • Fennel seeds (Perumjeerakam) - 1 tsp

To marinate
-------------------
  • Turmeric powder - 1 tsp
  • Chilli powder - 4 tbsp
  • Coriander powder- 4 tbsp
  • Pepper powder - 1 tsp
  • Ginger garlic paste -1/2 tsp
  • Garam Masala powder -1/2 tsp
  • Salt -to taste
  • Vinegar - 1 tbsp





Method
----------
  1. Marinate the beef with the ingredients given above and keep aside for at-least 20 minutes.
  2. Pressure cook the beef in medium for 5 whistles .There is no need to add water as water will ooze out from beef. When the beef is cooked switch off the flame and allow the water to evaporate completely.
  3. Gently crush ginger ,garlic and green chilli to a coarse paste.
  4. In a pan dry roast the ingredients given in " to dry roast" and grind to a coarse powder.
  5.  In a kadai add oil .Splutter mustard seeds, curry leaves and dried red chilli .
  6.  Add chopped onion and saute till onion becomes brown.
  7. Add crushed ginger ,garlic , green chilli paste and saute till  raw smell disappears,
  8. Add turmeric, chilli and coriander powders and mix well.
  9. Add chopped tomatoes and dry roasted garam masala powder and saute well till they becomes mushy and oil starts oozing out.
  10. To this mixture, add cooked beef and saute in medium flame till the masala is coated well on the beef. Put in flame to low and. stir in between Add oil in between if needed.
  11. Serve hot with rice, roti, chapathi, appam etc.
