Tomato Rice
Ingredients

- Cooked basmati rice -2 cup
- Onion - 1 chopped
- Tomato- 2 chopped
- Green chilly - chopped
- Curry Leaves -few
- Chopped Ginger - 2 tbsp
- Chopped garlic - 1/2 tsp
- Hing /Asafoetida - 1/4 tsp
- Red Chilly Powder - 1 tbsp
- Turmeric Powder - 1/2 tsp
- Red Chilly - 2
- Mustard Seeds - 1 tsp
- Coriander Leaves - 2 tbsp
- Nuts/Peanuts - few
- Oil- 3 tbsp
- Water - 1/4 cup
- Salt
Method

- Heat a pan and add oil.Fry nuts and keep aside .
- In the same oil, splutter mustard seeds, red chilly and curry leaves.
- Add chopped ginger , garlic and saute till a nice aroma comes.
- Add finely chopped onions, green chilly and saute till onion turns light brown.
- Add chopped tomatoes and saute till they gets mashed nicely.
- Add turmeric, red chilly powder, salt and hing and mix well for 2 minutes.
- Add 1/4 cup water.Cover and cook for 3 minutes.
- Add freshly chopped coriander leaves, nuts and cooked rice and mix well.
- Serve hot with salad, pickle and pappad.
