Tomato Rice





Ingredients

  • Cooked basmati rice -2 cup
  • Onion - 1 chopped
  • Tomato- 2 chopped
  • Green chilly -  chopped
  • Curry Leaves -few
  • Chopped Ginger - 2 tbsp
  • Chopped garlic - 1/2 tsp
  • Hing /Asafoetida - 1/4 tsp
  • Red Chilly Powder - 1 tbsp
  • Turmeric Powder - 1/2 tsp
  • Red Chilly - 2
  • Mustard Seeds - 1 tsp
  • Coriander Leaves -  2 tbsp
  • Nuts/Peanuts - few
  • Oil- 3 tbsp
  • Water - 1/4 cup
  • Salt


Method
----------------
  1. Heat a pan and add oil.Fry nuts and keep aside .
  2. In the same oil, splutter mustard seeds, red chilly and curry leaves.
  3. Add chopped ginger , garlic and saute till a nice aroma comes.
  4. Add  finely chopped onions, green chilly and saute till onion turns light brown.
  5. Add chopped tomatoes and saute till they gets mashed nicely.
  6. Add turmeric, red chilly powder, salt and hing and mix well for 2 minutes.
  7. Add 1/4 cup water.Cover and cook for 3 minutes.
  8. Add freshly chopped coriander leaves, nuts and cooked rice and mix well.
  9. Serve hot with salad, pickle and pappad.
