Vegetable Pulav







Ingredients

  • Basmati rice - 1 cup
  • Boiling Water - 2 cups
  • Vegetables Chopped Lengthwise - 1 cup (I used onions, carrot, beans, broccoli)
  • Cooked Green Peas - 1/4 cup
  • Green chill - 1 chopped
  • Ginger garlic Paste  - 1/4 tsp
  • Cardamom - 1
  • Cloves 3
  • Bay Leaf - 1
  • Cinnamon - 1 small piece
  • Oil/Ghee - 2 tbsp
  • Lemon juice - 1 tsp
  • Salt



Method

  1. Soak  rice in water for half an hour and drain .
  2. Boil water with cloves, cardamom, bay leaf, cinnamon and 1 tsp oil and lemon juice.(this prevents the rice from sticking each other).
  3. Cook rice with enough salt by adding the above boiling water .
  4. Heat a pan in  and add 2tbsp oil/ ghee .
  5. Saute  1 cinnamon, 1 clove, followed by ginger garlic paste.
  6. Add finely sliced onions and saute till brown, followed by thinly sliced vegetables of your choice and cooked green peas.
  7. Ass salt and chopped green chilly.
  8. Saute for a while and cover and cook for 2 minutes.
  9. Now add cooked rice and gently mix.
  10. Cover and keep in low flame for 5 minutes
  11. Serve  hot with any veg or non veg curry.


Notes
---------

  1. To prevent rice from sticking to each other, add  1 tsp oil and lemon juice while cooking rice.
